Honey Garlic Pineapple Chicken

  1. Step 1 - Prep Ingredients Cut chicken into roughly even sized chunks. Cut pineapple into bite-sized chunks. Mince garlic.

  2. Step 2 - Sear Chicken Season chicken with salt and pepper. Heat Dutch oven on medium-high with olive oil. Sear chicken strongly to get a good crust. Remove chicken but leave oil and brown bits.

  3. Step 3 - Cook Pineapple Put pineapple in the hot Dutch oven. Cook 5 minutes on medium heat until edges soften and brown.

  4. Step 4 - Braise Add chicken back to pot with pineapple. Add enough chicken stock to almost cover. Boil out almost all liquid. Add garlic, cook 45 seconds, then add honey to glaze each piece.

  5. Step 5 - Serve Serve and enjoy! Roasted sweet potato chunks make a great AIP side dish.
